Ingredients:
1/4 cup quinoa or amaranth
3/4 to 1 cup water
4oz can green chilis
1 cup fat-free soymilk
2 cups corn (if using frozen, cook or let thaw)
1/2 cup cooked black beans
white pepper to taste
1-2 tsp pure maple syrup
hot sauce to garnish
Directions:
1. Cook the quinoa or amaranth in water for 10-15 minutes
2. Transfer cooked ‘grain’ to your blender
3. Add 1 1/2 cups corn, chilis and soy milk
4. Blend until smooth
5. Transfer to a medium saucepan
6. Stir in remaining corn and black beans
7. Heat thorougly
8. Add white pepper and maple to taste
8. Serve and garnish with hot sauce
