(makes 6 muffins)
1 cup whole wheat pastry flour
2 tbsp unsweetened cocoa
1 tsp baking powder
a pinch salt
2 heaping tbsp unsweetened applesauce
1/4 cup raw sugar
1/2 cup chocolate soymilk
1/4 tsp vanilla extract
1/2 cup vegan chocolate chips
1/4 cup chopped walnuts or other nuts
preheat oven 375F
1. in a large bowl, whisk applesauce, vanilla and soymilk
2. in another bowl, whisk baking powder, salt and cocoa
3. pour dry mix into wet mix in 2-3 batches, stirring to combine
4. once combined, gently stir in chips and nuts
5. spray cups or tin (or use non-stick)
6. spoon into pan and bake 15-20 minutes
For Brownie Cupcakes, top off with smooth peanut butter, ricemellow or fat-free vanilla icing (mix a splash of soymilk with vanilla extract and 1-2 cups of confectioners sugar).
